Clear Skin | Dark Chocolate Granola Bars

If you have ever battled with acne you may have heard well you shouldn’t eat this or that. I remember always being told don’t eat chocolate it will make you break out more. While it is true that if you eat sugary milk chocolate and you are acne-prone yes your chances of breaking out from it are higher. The dairy and sugar in that chocolate cause inflammation internally which then shows on the skin.

Dark chocolate, however, has acne-fighting properties. This week I really wanted to create a sweet treat for those who are battling acne but still want to indulge. For women who tend to break out only during their cycle, these granola bars are a great way to boost your immune system. The week before you start your cycle you really want to incorporate magnesium-rich foods. Now you have an excuse to crave chocolate the week before your cycle!

Dark Chocolate Granola Bars

Makes: 12 bars

Dark Chocolate Granola Bars

  • 3/4 cup gluten-free rolled oats (grind into flour)

  • 3 TBSP manuka honey

  • 1/4 cup freeze-dried blueberries

  • 1/4 cup dried cranberries

  • 1/2 cup enjoy life vegan dark chocolate chips ( set 1/2 aside to drizzle over the top)

  • 1/4 cup chia seeds

  • 1/4 cup flax seeds

  • 1/4 cup hemp seeds

  • 1 teaspoon vanilla

  • 1 teaspoon cinnamon

  • dash of sea salt

  • 3/4- 1 cup water

  • orange zest

  1. Heat oven to 325°F. Grease a 9-inch pan with coconut oil.

  2. In a mixing bowl add ground oatmeal, blueberries, cranberries, 1/4 cup dark chocolate, chia seeds, flaxseed, hemp seeds, salt, and cinnamon. Once all of the dry ingredients are in the bowl add in the honey and vanilla. Slowly add in water, you do not want to make the mixture too thin.

  3. Pour mixture into a pan and spread it evenly with a spatula. Bake for 25 minutes and allow to cool for 5 minutes.

  4. Once the granola bars are cooled melt the remainder of the dark chocolate in a pot. When the dark chocolate is smooth take a spatula and drizzle the dark chocolate across the granola bars. Take a zester to and orange rind and sprinkle the zest all over the granola bars. Place in the freezer for 10 minutes for the dark chocolate drizzle to harden.

  5. Cut the granola bars evenly. You should get 10-12 bars out of them. These make a great snack for everyone! I keep mine in the refrigerator so the chocolate does not melt.

Much love,
